Eggless isn't an adaptation — it's how we bake
Great eggless baking isn't regular baking with the eggs left out. Eggs do real structural work in a cake — they bind, they lift, they carry moisture — and simply removing them from a standard recipe is what gives "eggless" its reputation for being dense, dry or a little disappointing. That's not how we build a recipe.
Every item at Simply Sweet, from the sponge to the ganache to the buttercream, is developed and tested specifically for eggless baking from the very first draft, not adapted from a conventional one afterwards. The balance of moisture, structure and flavour is worked out for eggless, not around the absence of eggs — which is why the texture holds up in a delicate rose pistachio sponge and in a dense fondant-covered tier alike.
Eggless was never the compromise here. It's the only way we've ever baked.

What do you use instead of eggs?
We use proven plant-based binders and moisture sources in place of eggs, adjusted recipe by recipe rather than one substitute applied everywhere. That per-recipe adjustment is what lets a light sponge and a dense fondant-covered tier both hold their structure properly.
How long do eggless cakes stay fresh?
Like any freshly baked cake made without preservatives, ours are best enjoyed within a couple of days of collection or delivery. Refrigerate if you're not serving the same day, and bring the cake back to room temperature before serving for the best texture. We bake to order, so your cake is always freshly made, never held in a display case.
