What 13 Years of Baking in Udaipur Have Taught Me About Cakes, Celebrations & Changing Tastes

When I started Simply Sweet in 2013–14, customised cakes were still a relatively new concept in Udaipur. We were among the first homebakers introducing eggless customised fondant cakes to the city, at a time when ordering a cake usually meant choosing something fairly traditional.

Over the years, I have had the privilege of watching Udaipur's dessert culture evolve — and, in many ways, grow alongside us.

One of the biggest changes I have seen is the way people celebrate. Today, customers rarely want to pick up "just a cake." They want to create something that feels personal and meaningful for the person they are celebrating. A favourite colour, a childhood memory, a profession, a hobby, a wedding theme, a special photograph or simply an inside joke — these little details have become an important part of the cake.

A cake is no longer just something to cut. It has become a part of the story.

Saying Yes, to the Best of Our Ability

Running a bakery for over a decade has not always been easy. There have been last-minute orders, impossible timelines, challenging designs and days when we have had to stretch ourselves far beyond what seemed possible. But we have always tried to say yes — to the best of our ability — and give every order, whether big or small, the same care and attention.

Still Getting Excited, Thirteen Years Later

And after all these years, I still find myself getting excited about creating something new.

Because for me, baking has never been only about making desserts. It is about understanding the occasion, listening to the story behind it, and turning that feeling into something people can see, taste and remember.

Thirteen years later, I am grateful to still be creating for Udaipur — and even more grateful to have witnessed its celebrations become sweeter, more personal and more beautiful with every passing year.
